Crab Salad

Crab salad (krabovy salat in Russian) is an Eastern European mayonnaise salad of crab sticks (surimi), hard-boiled eggs, canned sweet corn and cucumber, an everyday dish in Russia and other countries of the former USSR.

Ingredients

  • crab sticks250 g
  • hard-boiled eggs3-4
  • canned corn250 g
  • cucumber150 g
  • mayonnaise3-4 tbsp
  • saltto taste
  • fresh dill or parsleyoptional

Method

  1. 1Put the eggs in a pan of cold water, bring to a boil and cook for 10 minutes, then move them to ice water for 5 minutes so the yolks do not turn grey. Peel and cut into small cubes. Cut the crab sticks into medium-sized pieces (if frozen, thaw them in the fridge and pat dry). Dice the cucumber into 1 cm cubes. Drain the corn in a sieve.
  2. 2In a large bowl, combine the eggs, crab sticks, corn and cucumber. Add a pinch of salt, and go easy: the mayonnaise and the crab sticks are already salty.
  3. 3Dress with 3 tablespoons of mayonnaise and mix well; if the salad looks dry, add a fourth. Add finely chopped dill or parsley if you like.
  4. 4Refrigerate for 30 minutes so the flavours come together, and serve chilled.
