French Onion Soup
French Onion Soup is the epitome of French comfort and culinary elegance.

Ingredients
- yellow onions6 large
- unsalted butter4 tbsp
- olive oil1 tbsp
- sugar1 tsp
- salt1 tsp
- garlic2 cloves
- dry white wine1/2 cup
- flour2 tbsp
- beef broth2 l
- bay leaf1
- fresh thyme2 sprigs
- freshly ground black pepper1/2 tsp
- Worcestershire sauce1 tbsp
- balsamic vinegar1 tbsp
- French baguette, cut into 1 cm thick slices1
- olive oil2 tbsp
- Gruyère cheese2 cup
- Parmesan cheese1/2 cup
Method
- 1In a large saucepan, melt butter and olive oil over medium heat. Add the sliced onions, salt and sugar. Cook, stirring, until the onions are soft and golden, about 45-55 minutes. Add minced garlic and cook for 1 minute more.
- 2Increase heat to medium-high and add the white wine. Scrape the brown bits from the bottom. Cook until the wine is almost evaporated, about 8-10 minutes. Sprinkle flour over the onions and cook for 1-2 minutes, stirring.
- 3Add the beef broth, bay leaf, thyme, Worcestershire sauce and black pepper. Bring to a boil, then reduce heat and simmer under a lid for 30 minutes. Remove the bay leaf and thyme. Add balsamic vinegar if desired.
- 4Preheat oven to 200°C. Brush the baguette slices with olive oil on both sides. Bake until golden and crisp, about 10 minutes, flipping halfway through.
- 5Preheat oven to grill mode. Ladle hot soup into fireproof bowls. Place 1-2 croutons on top and sprinkle with a generous amount of Gruyère and Parmesan. Place under the grill for 3-5 minutes, until the cheese is melted and bubbly.
