Ground Turkey Taco Bowls
Lean ground turkey seasoned with homemade taco spices, served over cilantro-lime rice with black beans, corn, salsa and avocado.

Ingredients
- ground turkey600 g
- long-grain white rice300 g
- canned black beans400 g
- frozen or canned corn200 g
- avocado1
- cumin2 tsp
- chili powder2 tsp
- smoked paprika1 tsp
- garlic powder1 tsp
- onion powder1 tsp
- salt1 tsp
- black pepper0.5 tsp
- lime1
- fresh cilantro4 tbsp
- salsa200 g
Method
- 1Cook the rice according to package instructions. While still hot, fluff with a fork and stir in the juice of half a lime and 2 tablespoons of chopped cilantro. Cover and keep warm.
- 2Mix together the cumin, chili powder, smoked paprika, garlic powder, onion powder, salt and pepper in a small bowl — this is your taco seasoning.
- 3Heat a large skillet over medium-high heat. Add the ground turkey, breaking it up with a spoon. Cook for 7–8 minutes, stirring occasionally, until browned and cooked through. Drain any excess liquid.
- 4Add the taco seasoning to the turkey along with 3 tablespoons of water. Stir well and cook for 2 more minutes until the sauce thickens and coats every piece of meat. Taste and adjust salt.
- 5Warm the black beans in a small pan or microwave. Heat the corn if frozen.
- 6Assemble the bowls: start with a base of cilantro-lime rice, add the seasoned turkey, then black beans and corn. Top with sliced avocado, a scoop of salsa and remaining cilantro. Squeeze the rest of the lime over the top.
