Ingredients

  • pasta300 g
  • olive oil2 tbsp
  • garlic3 cloves
  • red onion, cut into half rings1
  • zucchini1 small
  • yellow squash1 small
  • red bell pepper1
  • yellow or orange bell pepper1
  • frozen green peas1 cup
  • asparagus, cut into bite-size pieces200 g
  • cherry tomatoes200 g
  • parmesan1/2 cup
  • lemon, juice and zest1
  • dried oregano1 tsp
  • fresh thyme leaves1 tsp
  • salt and black pepperto taste
  • fresh basilfor garnish

Method

  1. 1In a large saucepan, bring salted water to a boil and cook the pasta until al dente. Drain and set aside.
  2. 2In a large skillet, heat the olive oil over medium heat. Add garlic and red onion and sauté until soft, about 3 minutes.
  3. 3Add zucchini, yellow squash, bell peppers and asparagus. Stir-fry for about 5 minutes until vegetables are soft. Add green peas and cherry tomatoes and cook for another 2-3 minutes.
  4. 4Add the cooked pasta to the skillet with the vegetables. Pour in the lemon juice and add the lemon zest, dried oregano, fresh thyme, salt and pepper. Mix well.
  5. 5Sprinkle with grated parmesan and stir until the cheese melts and coats the pasta. Garnish with fresh basil and serve hot.
