Baked Cod
Cod fillets baked at high heat with garlic butter, capers, and lemon.

Ingredients
- cod fillets, about 2.5 cm thick700 g
- unsalted butter60 g
- garlic cloves4
- olive oil2 tbsp
- lemon juice3 tbsp
- capers2 tbsp
- smoked paprika1 tsp
- red pepper flakes0.5 tsp
- fresh parsley3 tbsp
- salt1 tsp
- black pepper0.5 tsp
Method
- 1Preheat oven to 200°C (400°F). Pat cod fillets completely dry with paper towels — this is the single most important step.
- 2Mix together softened butter, garlic, olive oil, lemon juice, smoked paprika, red pepper flakes, salt, and pepper in a small bowl.
- 3Place cod in a baking dish in a single layer. Spoon the butter mixture over each fillet and scatter capers on top.
- 4Bake uncovered for 12–15 minutes, until the flesh turns opaque and flakes easily with a fork. A 2.5 cm thick fillet takes about 13 minutes.
- 5For a golden top, switch to broil for 2 minutes at the end — watch closely, it browns fast.
- 6Spoon the pan juices over the fish, scatter fresh parsley, and serve immediately with lemon wedges.
