Chickpea Tikka Masala

Chickpea Tikka Masala

Ingredients

  • canned chickpeas800 g
  • neutral oil or coconut oil2 tbsp
  • large onion1
  • garlic cloves4
  • fresh ginger, grated or finely minced2 tbsp
  • tomato paste2 tbsp
  • canned crushed or chopped tomatoes400 g
  • full-fat coconut milk400 ml
  • garam masala2 tsp
  • ground cumin1.5 tsp
  • ground coriander1.5 tsp
  • turmeric1 tsp
  • smoked paprika1 tsp
  • cayenne pepper0.5 tsp
  • fine salt1 tsp
  • fresh lemon juice1 tbsp
  • cilantro1 small bunch

Method

  1. 1Build the flavor base. Heat the oil in a large deep pan over medium heat. Add the diced onion with a pinch of salt and cook for 8 to 10 minutes, stirring regularly, until golden and beginning to caramelize — not just softened. The onion is the flavor foundation; don't rush this step with high heat. Add the garlic and grated ginger and cook for 2 minutes until very fragrant.
  2. 2Bloom the spices. Add the garam masala, cumin, coriander, turmeric, paprika, and cayenne to the pan. Stir constantly for 60 to 90 seconds over medium heat — the spices should smell intensely fragrant, almost toasted. This is the most important step in the recipe. Add the tomato paste and stir for another 2 minutes, letting it darken and cook in the pan rather than just warming through. The combined spice-and-tomato paste mixture should look dark and sticky.
  3. 3Add tomatoes and simmer. Pour in the canned tomatoes and stir to combine, scraping up anything on the bottom of the pan. Add 100 ml of water. Bring to a simmer, then reduce to medium-low and cook for 12 to 15 minutes until the sauce thickens and the oil begins to separate slightly at the surface — this is a sign the tomatoes have fully cooked down and the flavors have concentrated.
  4. 4Add chickpeas and coconut milk. Add the drained chickpeas and stir to coat in the sauce. Cook for 5 minutes to let the chickpeas absorb some of the sauce. Reduce the heat to low. Pour in the coconut milk and stir gently. Do not boil at this stage — keep it at a gentle simmer for 5 to 8 minutes until the sauce is creamy and cohesive. Taste and season with salt.
  5. 5Finish and serve. Remove from the heat and stir in the lemon juice — it brightens the whole dish. Let it rest for 5 minutes before serving. Scatter with fresh coriander. Serve over basmati rice with warm naan on the side. The dish improves significantly over the next 24 hours as the spices continue to develop in the sauce.
