Ground beef glazed in spicy-sweet hot honey, served over jasmine rice with a cold scoop of cottage cheese on top.

Hot Honey Cottage Cheese Beef Bowl

Ingredients

  • lean ground beef500 g
  • jasmine rice200 g
  • cottage cheese300 g
  • honey4 tbsp
  • red pepper flakes1 tsp
  • apple cider vinegar1 tsp
  • smoked paprika0.25 tsp
  • garlic cloves3
  • soy sauce2 tbsp
  • olive oil1 tbsp
  • cucumber1
  • scallions4
  • sesame seeds2 tbsp
  • salt1 tsp
  • black pepper0.5 tsp

Method

  1. 1Cook the jasmine rice: combine 200 g rice with 400 ml cold water. Bring to a boil, reduce to lowest heat, cover, cook 15 minutes. Leave covered 5 more minutes off heat.
  2. 2Make the hot honey: honey, red pepper flakes, apple cider vinegar, smoked paprika in a small saucepan over low heat. Stir 1 minute until fragrant. Remove immediately.
  3. 3Heat olive oil in a large skillet over medium-high heat. Add ground beef, break apart. Cook 7–8 minutes until browned. Drain excess fat. Season with salt (1 tsp) and black pepper (0.5 tsp).
  4. 4Add minced garlic and soy sauce to the beef. Cook 1 minute. Pour two-thirds of the hot honey over the meat, toss to coat. Remove from heat.
  5. 5Slice cucumber into thin rounds. Slice green onions on the diagonal.
  6. 6Divide rice between four bowls. Spoon hot honey beef over rice. Add cottage cheese to one side — do not stir. Arrange cucumber, scatter green onions and sesame seeds, drizzle remaining hot honey over the cottage cheese.
