Hot honey is honey infused with chili peppers. The homemade version takes 90 seconds: honey, chili flakes, apple cider vinegar, smoked paprika, low heat. Just as good as store-bought.
The cottage cheese is the part people question and then never skip again. It cools the heat, adds 15g protein per serving, and turns slightly creamy when it touches the hot beef. Use 4–5% fat cottage cheese.
Hot Honey Cottage Cheese Beef Bowl
By Sergei Martynov
Ground beef glazed in spicy-sweet hot honey, served over jasmine rice with a cold scoop of cottage cheese on top. The cottage cheese melts just enough from the heat of the beef to form a creamy layer. One pan. 25 minutes.

How to make it
Instructions
- 1
Cook the jasmine rice: combine 200 g rice with 400 ml cold water. Bring to a boil, reduce to lowest heat, cover, cook 15 minutes. Leave covered 5 more minutes off heat.
- 2
Make the hot honey: honey, red pepper flakes, apple cider vinegar, smoked paprika in a small saucepan over low heat. Stir 1 minute until fragrant. Remove immediately.
- 3
Heat olive oil in a large skillet over medium-high heat. Add ground beef, break apart. Cook 7–8 minutes until browned. Drain excess fat.
- 4
Add minced garlic and soy sauce to the beef. Cook 1 minute. Pour two-thirds of the hot honey over the meat, toss to coat. Remove from heat.

- 5
Slice cucumber into thin rounds. Slice green onions on the diagonal.
- 6
Divide rice between four bowls. Spoon hot honey beef over rice. Add cottage cheese to one side — do not stir. Arrange cucumber, scatter green onions and sesame seeds, drizzle remaining hot honey over the cottage cheese.
Frequently Asked Questions
Can I make this with chicken instead of beef?
Yes, ground chicken or diced breast both work. Chicken is milder so the hot honey comes through more — reduce honey by 1–2 tsp. Cooking time drops to 6–8 minutes.
Why add cottage cheese to a hot beef bowl?
When cottage cheese hits hot beef, the whey mixes with the glaze and forms a creamy layer. It adds 15g protein per serving and takes the edge off the chili heat. Use 4–5% fat.
How to make hot honey at home?
4 tbsp honey, 1 tsp red pepper flakes, 1 tsp apple cider vinegar, pinch of smoked paprika. Low heat, 1 minute. Remove immediately.
Can I use salmon instead of beef?
Yes — 150g fillet per person, brush with hot honey, bake at 200°C for 12–14 minutes. Rice, cottage cheese, cucumber stay the same. About 420–440 kcal per serving.
How to meal prep this bowl?
Store everything separately: beef+sauce, rice, cottage cheese, and vegetables each in their own container. Beef keeps 3 days. Add cottage cheese only when ready to eat.

Rest the beef for at least 5 minutes after cooking hot honey cottage cheese beef bowl. Cutting immediately lets all those precious juices run onto the board. A loose foil tent keeps it warm without steaming the crust.
