Soups

A good soup is the most underrated comfort food there is. It costs almost nothing to make, it feeds a crowd, and leftovers get better the next day. I grew up eating borshch in various forms, so I might be biased, but I genuinely believe soup is the one dish every cook should master first. The recipes here go from clear broths you can sip from a mug to thick, hearty stews that need a chunk of bread on the side. There's French onion soup that requires patience with the caramelizing (worth it), quick Asian noodle soups for weeknight dinners, and a few cold soups for summer. The foundation of any good soup is the base. If you have good stock — homemade or a decent store-bought one — you're already eighty percent there. Don't skip the step of sweating your aromatics properly. Onions, garlic, celery: give them ten minutes on medium heat before adding liquid. That's where the depth comes from.
