Massaman Curry
Thailand’s mildest and most complex curry — slow-braised beef with potato and roasted peanuts in a rich coconut milk sauce spiced with cinnamon, cardamom, and cumin.

Ingredients
- beef300 g
- potatoes2
- onion1
- oil for frying1 tbsp
- massaman curry paste2 tbsp
- coconut milk400 ml
- roasted peanuts2 tbsp
- fish sauce or soy sauce1 tbsp
- sugar1 tsp
- lime, juice only0.5
- fresh cilantro for serving
Method
- 1Heat oil in a pot. Fry the curry paste for 1–2 minutes, stirring, until fragrant.
- 2Add beef and onion and brown lightly until golden. Pour in the coconut milk, cover and braise gently for 30 minutes; if the sauce thickens too much, add a splash of water.
- 3Add potatoes, fish sauce, and sugar. Cook until potatoes are tender, 15–20 more minutes.
- 4Add peanuts and lime juice. Taste and adjust salt and heat. Serve with rice, topped with fresh cilantro.
