Thailand’s mildest and most complex curry — slow-braised beef with potato and roasted peanuts in a rich coconut milk sauce spiced with cinnamon, cardamom, and cumin.

Massaman Curry

Ingredients

  • beef300 g
  • potatoes2
  • onion1
  • oil for frying1 tbsp
  • massaman curry paste2 tbsp
  • coconut milk400 ml
  • roasted peanuts2 tbsp
  • fish sauce or soy sauce1 tbsp
  • sugar1 tsp
  • lime, juice only0.5
  • fresh cilantro for serving

Method

  1. 1Heat oil in a pot. Fry the curry paste for 1–2 minutes, stirring, until fragrant.
  2. 2Add beef and onion and brown lightly until golden. Pour in the coconut milk, cover and braise gently for 30 minutes; if the sauce thickens too much, add a splash of water.
  3. 3Add potatoes, fish sauce, and sugar. Cook until potatoes are tender, 15–20 more minutes.
  4. 4Add peanuts and lime juice. Taste and adjust salt and heat. Serve with rice, topped with fresh cilantro.
