Pot Roast

Ingredients

  • beef1.5-2 kg
  • vegetable oil2 tbsp
  • onions2 large
  • carrots4
  • celery3 stalks
  • garlic4 cloves
  • beef broth2 cup
  • dry red wine1 cup
  • bay leaves2
  • fresh rosemary2 sprigs
  • fresh thyme2 sprigs
  • potatoes1 kg
  • salt and black pepperto taste

Method

  1. 1Preheat the oven to 160°C. Season the meat on all sides with salt and pepper.
  2. 2Heat the oil in a large ovenproof pan and fry the meat on all sides until crusty, about 3-4 minutes per side. Remove and set aside.
  3. 3In the same pan, fry the onion, carrots, celery and garlic until soft, about 5-7 minutes. Return the meat to the pot. Add the broth, wine, bay leaves, rosemary and thyme.
  4. 4Cover with a lid and place in the oven for 2.5 hours. Add the potatoes and cook for another 45-60 minutes, until the meat is very soft and easily separates with a fork.
  5. 5Remove the meat and vegetables. Strain the sauce and boil on the stove to the desired consistency. Slice the meat, place on a platter with the vegetables and pour the sauce over it.
