Roquefort Salad

Roquefort salad is a French composed salad built around Roquefort, the pungent blue-veined sheep's-milk cheese aged in the limestone caves of Roquefort-sur-Soulzon, paired here with sweet pear and toasted walnuts.

Roquefort Salad

Ingredients

  • lettuce1 head
  • walnuts, lightly toasted1/2 cup
  • red onion, cut into thin rings1
  • ripe pear, cored and thinly sliced1
  • dried cherries or cranberries1/2 cup
  • Roquefort cheese100 g
  • red wine vinegar2 tbsp
  • Dijon mustard1 tsp
  • honey1 tsp
  • olive oil4 tbsp
  • salt and pepperto taste

Method

  1. 1Separate the head of lettuce into leaves, rinse thoroughly in cold water and drain.
  2. 2Slice the red onion into thin half rings. Core and thinly slice the pear. Lightly toast the walnuts in a dry pan until golden. Slice or crumble the Roquefort cheese.
  3. 3Arrange lettuce leaves on a large platter or divide among plates.
  4. 4Sprinkle red onion, pear, walnuts, dried cherries or cranberries and Roquefort cheese on top.
  5. 5In a small bowl, whisk together the Dijon mustard, honey, red wine vinegar, salt, and pepper. Slowly whisk in the olive oil until the dressing is smooth and lightly thickened. Pour over the salad and toss gently. Serve immediately.
