Sichuan Spicy Chicken
A classic of Chinese cuisine with bold flavor and the signature numbing heat of Sichuan pepper — the mala effect.

Ingredients
- chicken fillet300 g
- cornstarch1 tsp
- soy sauce1 tbsp
- rice wine or rice vinegar1 tsp
- soy sauce2 tbsp
- rice vinegar or apple cider vinegar1 tbsp
- sugar1 tsp
- sesame oil1 tsp
- cornstarch + 2 tbsp water1 tsp
- garlic cloves2
- dried chili peppers5
- bell pepper1
- roasted peanuts50 g
- oil for frying
Method
- 1Marinate chicken with cornstarch, soy sauce, and rice wine for at least 15 minutes — velveting technique keeps it juicy inside.
- 2Mix all sauce ingredients in a bowl and set aside.
- 3In a very hot wok fry dried chili until fragrant, add garlic, then chicken — fry until golden.
- 4Add bell pepper, stir-fry one minute. Pour in sauce and bring to a boil until thickened.
- 5Add peanuts, stir and serve immediately with jasmine rice.
