Gazpacho

Ingredients

  • ripe tomatoes1 kg
  • cucumber1
  • green bell pepper1
  • red bell pepper1
  • red onion1/2
  • garlic2 cloves
  • stale white bread, crustless1 slice
  • virgin olive oil1/4 cup
  • red wine vinegar or sherry vinegar3 tbsp
  • salt1 tsp
  • freshly ground black pepper1/2 tsp
  • water1/2 cup

Method

  1. 1Wash and chop the tomatoes, cucumber, green and red peppers, red onion and garlic.
  2. 2Soak the stale white bread in water for a few minutes, then squeeze out the excess liquid.
  3. 3In a blender, combine the tomatoes, cucumber, peppers, red onion, garlic and bread. Blend on high speed until smooth, about 2 minutes.
  4. 4While blending on low speed, gradually add the olive oil and vinegar. Continue blending until a smooth emulsion is obtained. Add water if needed to reach desired consistency. Blend in the salt (1 tsp) and black pepper (1/2 tsp).
  5. 5Strain the mixture through a sieve. Pour into a large pitcher and chill in the refrigerator for at least 2 hours or overnight. Taste and adjust seasoning before serving. Serve in chilled glasses or bowls.
