A refreshing Korean side dish of daikon sliced into rounds, salted to draw out moisture, then marinated in a sweet-tangy soy dressing with garlic and chili.

Korean Marinated Daikon

Ingredients

  • daikon radish300 g
  • salt1 tsp
  • soy sauce1.5 tbsp
  • rice vinegar1 tbsp
  • sesame oil0.75 tsp
  • honey or sugar1 tsp
  • garlic clove1
  • ground chili0.25 tsp
  • sesame seeds for serving0.5 tsp
  • scallion for garnish

Method

  1. 1Slice daikon into thin rounds or half-rounds. Sprinkle with salt, mix, and let sit for 15 minutes. Drain the liquid released.
  2. 2Mix soy sauce, vinegar, sesame oil, honey, garlic, and chili in a bowl.
  3. 3Add the daikon to the marinade and toss well. Refrigerate for 1 hour.
  4. 4Sprinkle with sesame seeds and green onion. Serve cold.
