Ground turkey, sweet potato, spinach, and bell pepper — all cooked in one skillet on the stovetop, no oven needed.

Ingredients
- lean ground turkey500 g
- sweet potatoes500 g
- bell pepper1 piece
- baby spinach100 g
- cottage cheese200 g
- avocados2 piece
- hot honey2 tbsp
- olive oil2 tbsp
- garlic cloves3 piece
- smoked paprika1 tsp
- cumin1 tsp
- chili powder0.5 tsp
- garlic powder0.5 tsp
- salt1 tsp
- black pepper0.5 tsp
- chicken or vegetable broth4 tbsp
Method
- 1Peel and dice the sweet potatoes into small 1 to 1.5 cm cubes. Dice the bell pepper. Mince the garlic.
- 2Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and break it apart. Cook 5 to 6 minutes until browned. Push the turkey to one side.
- 3Add the remaining oil. Add garlic and stir for 30 seconds, then add the sweet potato cubes and bell pepper. Stir everything together with the turkey.
- 4Pour in the broth, season with paprika, cumin, chili powder, garlic powder, salt, and pepper. Cover with a lid and cook on medium heat for 8 to 10 minutes until the sweet potato is fork-tender.
- 5Turn off the heat. Add the spinach and stir — residual heat wilts it in about a minute.
- 6Spoon into four bowls. Add cottage cheese and half an avocado to each. Drizzle with hot honey.
