One-Skillet Sweet Potato Turkey Bowl

Ingredients

  • lean ground turkey500 g
  • sweet potatoes500 g
  • bell pepper1 piece
  • baby spinach100 g
  • cottage cheese200 g
  • avocados2 piece
  • hot honey2 tbsp
  • olive oil2 tbsp
  • garlic cloves3 piece
  • smoked paprika1 tsp
  • cumin1 tsp
  • chili powder0.5 tsp
  • garlic powder0.5 tsp
  • salt1 tsp
  • black pepper0.5 tsp
  • chicken or vegetable broth4 tbsp

Method

  1. 1Peel and dice the sweet potatoes into small 1 to 1.5 cm cubes. Dice the bell pepper. Mince the garlic.
  2. 2Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and break it apart. Cook 5 to 6 minutes until browned. Push the turkey to one side.
  3. 3Add the remaining oil. Add garlic and stir for 30 seconds, then add the sweet potato cubes and bell pepper. Stir everything together with the turkey.
  4. 4Pour in the broth, season with paprika, cumin, chili powder, garlic powder, salt, and pepper. Cover with a lid and cook on medium heat for 8 to 10 minutes until the sweet potato is fork-tender.
  5. 5Turn off the heat. Add the spinach and stir — residual heat wilts it in about a minute.
  6. 6Spoon into four bowls. Add cottage cheese and half an avocado to each. Drizzle with hot honey.
