- 500 gsweet potatoes
- 1 piecebell pepper
- 100 gbaby spinach
- 200 gcottage cheese
- 2 pieceavocados
- 2 tbsphot honey

- 1 tspcumin
- ½ tspchili powder
- ½ tspgarlic powder
- 1 tspsalt
- ½ tspblack pepper
- 4 tbspchicken or vegetable broth
Method
- Peel and dice the sweet potatoes into small 1 to 1.5 cm cubes. Dice the bell pepper. Mince the garlic.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and break it apart. Cook 5 to 6 minutes until browned. Push the turkey to one side.
- Add the remaining oil. Add garlic and stir for 30 seconds, then add the sweet potato cubes and bell pepper. Stir everything together with the turkey.
- Pour in the broth, season with paprika, cumin, chili powder, garlic powder, salt, and pepper. Cover with a lid and cook on medium heat for 8 to 10 minutes until the sweet potato is fork-tender.
- Turn off the heat. Add the spinach and stir — residual heat wilts it in about a minute.
- Spoon into four bowls. Add cottage cheese and half an avocado to each. Drizzle with hot honey.
