This bowl happened because it was a weeknight, the oven was dirty, and I wanted to eat now. Everything into one skillet, lid on, 25 minutes. It has been my Monday standard ever since.
Add the spinach after turning off the heat. The residual heat wilts it slowly without releasing water. On a live flame spinach gives off liquid and makes everything soggy.
One-Skillet Sweet Potato Turkey Bowl
By Sergei Martynov
Ground turkey, sweet potato, spinach, and bell pepper — all cooked in one skillet on the stovetop, no oven needed. The sweet potato steams under a lid with a splash of broth while the turkey browns. Top with cold cottage cheese, avocado, and hot honey. The fastest version in this bowl series.

How to make it
Instructions
- 1
Peel and dice the sweet potatoes into small 1 to 1.5 cm cubes. Dice the bell pepper. Mince the garlic.
- 2
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and break it apart. Cook 5 to 6 minutes until browned. Push the turkey to one side.
- 3
Add the remaining oil. Add garlic and stir for 30 seconds, then add the sweet potato cubes and bell pepper. Stir everything together with the turkey.
- 4
Pour in the broth, season with paprika, cumin, chili powder, garlic powder, salt, and pepper. Cover with a lid and cook on medium heat for 8 to 10 minutes until the sweet potato is fork-tender.
- 5
Turn off the heat. Add the spinach and stir — residual heat wilts it in about a minute.
- 6
Spoon into four bowls. Add cottage cheese and half an avocado to each. Drizzle with hot honey.
Frequently Asked Questions
What is the practical advantage over other bowls in this series?
Everything cooks in one pan on the stovetop, no oven needed. Saves 20 to 25 minutes of oven pre-roasting. The sweet potato comes out soft and tender rather than caramelised.
How to cook sweet potato in a skillet so it softens in time?
Cut small — 1 to 1.5 cm cubes. Add broth, cover with lid for 8 to 10 minutes on medium heat. The steam cooks the potato from the inside out.
Why add spinach and bell pepper?
Volume, colour, and moisture. Spinach adds moisture that stops the turkey from drying out. Bell pepper adds mild sweetness and crunch.
How to make it lower in calories?
Cut avocado to a quarter, use low-fat cottage cheese, reduce hot honey to a teaspoon. Can bring it from 490 to 380-400 kcal.
Why is it called one-skillet if cottage cheese goes in separately?
One-skillet refers to the hot part. Cottage cheese, avocado, and hot honey go into the bowl cold, as toppings. Do not add cottage cheese to the hot skillet — it will break.
