Meat Dishes

Doro Wat (Ethiopian Spiced Chicken Stew)

Doro wat is the Ethiopian holiday stew: a deep red, intensely spiced chicken stew built on a foundation of onions cooked down slowly until they melt into a rich paste. Fiery berbere and aromatic niter kibbeh, a spiced clarified butter, give it heat and depth, while whole hard-boiled eggs simmer in the sauce to soak up flavour. Slow-cooked and celebratory, it's traditionally scooped up with injera, the tangy teff flatbread, in a shared communal meal.

Misir Wot (Ethiopian Red Lentil Stew) with red split lentils, niter kibbeh and berbere spice — Ethiopia recipe

Misir Wot (Ethiopian Red Lentil Stew)

Misir wot is an Ethiopian stew of split red lentils simmered with slowly cooked onions, berbere spice and niter kibbeh (spiced clarified butter) until the lentils collapse and the pot turns thick and creamy. It's the dish that appears on every Ethiopian vegetarian platter, scooped up with injera. On fasting days it is made with oil instead of the spiced butter. The flavor is hot, earthy, and faintly bitter from the berbere spice blend. This recipe serves 6. Rest it for 10 minutes before serving; it is better the next day.
