Chimichurri Rojo (Argentine Red Chimichurri)

Chimichurri rojo is the red version of Argentina's chimichurri, the uncooked sauce of parsley, garlic, oregano, wine vinegar and oil that goes on grilled meat. The red comes from pimentón dulce (sweet paprika) and ají molido, the crushed dried chili of the Argentine pantry; some cooks there also add chopped red bell pepper (morrón), and this recipe takes that route, charring the pepper over a flame first. Everything is chopped by hand, stirred with the vinegar, then covered with oil. Hands-on time is about 30 minutes; the pepper steams under a plate for 10 minutes while you chop the rest, and the finished sauce needs 30 minutes on the counter before it tastes right. Makes about 350 ml (1½ cups); a serving is about 3 tablespoons.

Empanadas Mendocinas (Argentine Baked Beef Empanadas)

Mendocinas are Mendoza's version of the empanada — baked, never fried, and distinguished by a milk dough that bakes softer than the standard. The filling is spiced ground beef with smoked paprika, cumin, green olives, and hard-boiled egg. No raisins. The paprika turns the filling and crust an orange-red that identifies these across Argentina. Made in batches, best eaten warm, and freezable before baking.

Provoleta (Argentine Grilled Provolone) with provolone, crusty bread and garlic — Argentina recipe

Provoleta (Argentine Grilled Provolone)

Provoleta is what opens an Argentine asado: a thick disc of provolone seared in a small cast iron pan until the outside forms a golden crust and the middle turns molten. Dried oregano and chili flakes go on before it hits the heat, and chimichurri goes over the top after. There's nothing complicated about it — the whole art is in getting a crust to form before the cheese collapses, and eating it straight from the pan with torn bread.
