Fraldinha with fraldinha, cassava flour and red onion — Brazil recipe

Meat Dishes

Fraldinha

Fraldinha is the Brazilian name for the bottom sirloin flap, a long flat muscle with coarse fibres and a loose grain that sits between the flank and the sirloin. It is one of the pillars of churrasco, cooked over charcoal with nothing on it but coarse salt, because the cut already carries enough fat and connective tissue to season itself. What makes or breaks it is not the fire but the knife: the grain is unusually visible and unusually coarse, and slicing along it instead of across it produces meat that no amount of chewing will get through. It is served with vinagrete and farofa, both of which are made while the coals come up to temperature.

Rotkohl (German Braised Red Cabbage) with red cabbage, apple and onion — Germany recipe

Rotkohl (German Braised Red Cabbage)

Rotkohl is the braised red cabbage that sits next to almost every German roast from October onwards: shredded cabbage cooked down for an hour with apple, onion, vinegar and cloves until it goes glossy and deep purple. The vinegar is not only there for taste. The pigment in red cabbage works like a pH indicator, and without acid the pot turns a murky blue-grey, which is also why the same vegetable is called Blaukraut in Bavaria and Rotkohl in the north. It tastes better on the second day, so most households cook it the night before the roast and take one job off the table.
