Forshmak

Forshmak is an Ashkenazi Jewish appetizer of salt-cured herring ground with tart apple, milk-soaked bread, hard-boiled egg and onion into a coarse, pungent spread. A staple of Jewish cuisine that hits every note — briny, sweet, sharp — all at once on a piece of dark rye bread.

Russian Apple & Cottage Cheese Blini

Golden Russian crepes filled with a mixture of smooth cottage cheese and caramelized apples — the apples are sautéed in butter with cinnamon until they soften and turn slightly translucent, then folded into the sweetened cheese filling. Each stuffed blini is pan-fried a second time until crisp on both sides. The contrast between the warm, spiced apple and the cool, creamy cheese is what makes these disappear from the plate before you’ve finished stacking them.

Bircher Muesli (Swiss Overnight Oats) with rolled oats, yogurt and apple — Switzerland recipe
🇨🇭SwitzerlandMedium
Breakfast and Brunch

Bircher Muesli (Swiss Overnight Oats)

Bircher muesli is a cold Swiss oat dish built around grated raw apple, developed by physician Maximilian Bircher-Benner around 1900 for patients at his Zurich clinic. Rolled oats soak overnight in yogurt, milk and apple juice with the grated apple and a squeeze of lemon, then get topped in the morning with fresh fruit, nuts and a drizzle of honey. Bircher-Benner himself, like Swiss recipes today, grated the apple in just before eating; this is the make-ahead version, with the apple soaked overnight alongside the oats. Unlike modern overnight oats, which center on the oats, Bircher muesli is built around the apple: it softens into the oats overnight and carries the flavor of the whole dish.

Pastila (Russian Apple Pastila) with apples, egg white and powdered sugar — Russia recipe
🇷🇺RussiaAdvanced
Sweet Dishes

Pastila (Russian Apple Pastila)

Pastila is an old Russian confection of baked apple purée whipped with egg white and sugar until pale and airy, then slowly dried into tender, marshmallow-like layers. The Belyov version from Tula stacks several dried sheets glued with more purée into a soft loaf. Tart antonovka apples, rich in pectin, are traditional; the result is naturally light and fruit-forward. Plan on two days: about 8 hours of baking and slow drying, plus an hour of draining the purée and a 12-hour rest before slicing.

Zefir (Russian Apple Marshmallow) with apples, agar and egg white — Russia recipe
🇷🇺RussiaMedium
Sweet Dishes

Zefir (Russian Apple Marshmallow)

Zefir is a light Russian confection — thick apple purée whipped with egg white and set with an agar-sugar syrup into airy, meringue-like rosettes. A descendant of pastila, it sets at room temperature rather than in the fridge, giving a delicate crust outside and a soft, springy centre. Naturally fat-free and gluten-free, it's dusted with powdered sugar and served in sandwiched pairs. The 60 minutes cover the hands-on work only: the purée has to cool completely first, and the piped zefir then dries at room temperature for 6–12 hours — overnight is easiest.

Sharlotka — Russian Apple Sponge Cake

The Russian home cake that appears the moment apples come into season: a whisked sponge poured over sliced apples and baked until golden. There is no butter and no mixer required beyond a whisk, and the lift comes entirely from eggs beaten with sugar. Tart apples keep it from turning cloying. Let it cool in the tin before you dust it with powdered sugar and slice it.

Bratapfel (German Baked Apples) with apple, raisins and almonds — Germany recipe
🇩🇪GermanyAdvanced
Sweet Dishes

Bratapfel (German Baked Apples)

A Bratapfel is a German baked apple: a whole apple, cored, filled with marzipan, toasted almonds and rum-soaked raisins, and baked until soft. In Germany it is a winter dessert, traditionally made at Christmas time from firm, tart apples that keep well, such as Boskoop. One is a Bratapfel, several are Bratäpfel, Dr. Oetker also calls them Puttäpfel, and in English they are simply German baked apples. This is the filling essen & trinken and LECKER use, here with a little brown sugar and cinnamon. A little apple juice goes into the dish, and you spoon it over the apples when they come out. They are usually served warm with vanilla sauce, which is not part of this recipe. The raisins soak in rum for 2 hours beforehand. After that the apples take about 70 minutes, 35 of them in the oven.
