  • 1 headgarlic
  • 3 tbsplemon juice
  • 50 mlvegetable oil
  • to tasteparsley, ground black pepper, salt

Method

  1. Salt, pepper and marinate cod fillets in lemon juice for 45-60 minutes.

  2. Fry the garlic in half the vegetable oil until golden.
  3. In a separate pan, heat the oil well and fry the cod on both sides until cooked through, about 10-12 minutes.
  4. When serving, drizzle the fish with the garlic oil and sprinkle with finely chopped parsley or cilantro. Serve with lemon slices, mayonnaise and tartar sauce.

Cod is a lean fish that dries out quickly. Do not fry pieces thicker than 3–4 cm for more than 3–4 minutes per side. Pat the fish dry with paper towels before frying — moisture prevents a crust from forming. The oil should be well heated to 170–180°C. Remove the fish from the heat as soon as it starts to flake easily.
