Pork and Cabbage Dumplings (Chinese Jiaozi)

These northern Chinese jiaozi have thin, pleasantly chewy skins and a juicy pork filling threaded with sweet Napa cabbage. Salting and squeezing the cabbage keeps the filling moist without flooding the wrappers. Make them for Lunar New Year, or settle in for an unhurried weekend folding session. The recipe makes 40 dumplings, 6 to 7 per serving.

Fresh Cabbage Shchi

A light, clean Russian cabbage soup made with fresh white cabbage rather than sauerkraut — beef broth, potatoes, a fresh tomato base, and a carrot-onion sauté, finished with sour cream and dill. It's the summer counterpart to dark, sour sauerkraut shchi: quicker, brighter, and best eaten the day it's made.

Rotkohl (German Braised Red Cabbage) with red cabbage, apple and onion — Germany recipe

Rotkohl (German Braised Red Cabbage)

Rotkohl is the braised red cabbage that sits next to almost every German roast from October onwards: shredded cabbage cooked down for an hour with apple, onion, vinegar and cloves until it goes glossy and deep purple. The vinegar is not only there for taste. The pigment in red cabbage works like a pH indicator, and without acid the pot turns a murky blue-grey, which is also why the same vegetable is called Blaukraut in Bavaria and Rotkohl in the north. It tastes better on the second day, so most households cook it the night before the roast and take one job off the table.

Russian Sauerkraut (Kvashenaya Kapusta) with white cabbage and carrots — Russia recipe

Russian Sauerkraut (Kvashenaya Kapusta)

Kvashenaya kapusta (квашеная капуста) is Russian sauerkraut: shredded white cabbage and grated carrot, salted dry and left to sour in their own juice, with no vinegar and no added water. In English it also goes by Russian sauerkraut or Russian fermented cabbage. This batch is 2.5 kg of shredded cabbage, 250 g of carrot and 65 g of salt, which comes to about 2.4 % of the vegetables by weight. Count on about 1 hour of work, then 5 days at room temperature and 2 days in the fridge. Many Russian kitchen recipes end the warm stage after 3 days; this one runs it for 5, so the cabbage has more time to turn sour before it goes into the cold. The USDA procedure for sauerkraut ferments for 3 to 4 weeks; this is the shorter Russian method, so the cabbage is kept in the fridge and never in a cupboard. It has no sugar and no spices in it.

Colcannon (Irish Mashed Potatoes with Cabbage) with potato and cabbage — Ireland recipe
🇮🇪IrelandMedium
Vegetable and Mushroom Dishes

Colcannon (Irish Mashed Potatoes with Cabbage)

Colcannon is Irish mashed potato with cooked cabbage or kale, milk and plenty of butter, often with scallions (spring onions), served with a pool of melted butter in a hollow on top. The name is usually traced to the Irish cál ceannann, 'white-headed cabbage', although nobody is sure where the word comes from, and in County Mayo it was called cally (in Japanese it is コルカノン). In Ireland it is one of the dishes most closely tied to Halloween, and older people put a ring into the colcannon to tell someone's future. This version uses Savoy cabbage, boiled briefly and squeezed dry, with scallions warmed in the milk, and takes about 45 minutes, because the cabbage and the milk are done while the potatoes simmer.
