- 1 cuppanko breadcrumbs

Method
- Preheat the oven to 220°C. Cut the zucchini into bars about 7-8 cm long and 1-1.5 cm thick.
- Whisk the eggs in a bowl. In a separate bowl, mix together the breadcrumbs, Parmesan, Italian herbs and 1/4 tsp salt.

- Place sliced zucchini in a large bowl, sprinkle with flour and the remaining salt, and stir to coat evenly.
- Dip each zucchini bar first in the egg, then coat in the breadcrumb mixture.

- Place the breaded sticks on a rack set on a baking tray, leaving a little space between them. Bake for 20 minutes until golden brown and crispy. Serve immediately with tomato sauce for dipping.
