Crab Stick Salad
A simple Russian salad of diced crab sticks and sweet corn with hard-boiled eggs, cooled rice, and fresh cucumber, bound with a light mayonnaise dressing. It is folded gently, chilled, and finished with green onion and dill, a New Year favourite.

- 250 gcrab sticks
- 200 gcanned corn
- 200 gcooked rice
- 4 wholeeggs
- 150 gcucumber
- 3 tbspgreen onion
- 120 gmayonnaise
- 2 tbspfresh dill
- ½ tspsalt
- ¼ tspblack pepper
Method
- Hard-boil the eggs for 10 minutes, cool in cold water, peel, and dice. Cook the rice until fluffy and let it cool to room temperature.
- Thaw the crab sticks if frozen, pat dry, and cut into small dice. Drain the canned corn well.
- Dice the cucumber and finely chop the green onion.
- In a large bowl, combine the crab sticks, corn, cooled rice, eggs, and cucumber.
- Add the mayonnaise, salt, and pepper, and fold gently to combine, taking care not to mash the rice or break up the crab sticks.
- Chill at least 1 hour. Stir in most of the green onion and dill, and scatter the rest on top before serving.
FAQ
Both versions are popular. With rice it is heartier, closer to a full salad; without rice and with cucumber it is lighter and fresher. Choose by occasion.
